Immune boosting, inflammation reducing superfood, high protein, vegan breakfast bowl ready in 5 minutes.
Since cutting out meat and dairy over four months ago due to a chronic stomach issue, which was brought on as a result of too much whey protein consumed during my days as a professional athlete. I struggled, like most at first, to adjust to the change and to find alternatives to breakfasts. I was used to choices lathered in butter or doused in cows milk, accompanied with some form of fried meat on slabs of toast and washed down with a milky brew or latte. (I don't know know how that was ever appealing!) However the transition was tough as i found myself having a lot of wholemeal toasts and vegan cereals at first which are high in hidden refined sugars and often some leave you crashing, bloated or hungry less than an hour later. I created this recipe after reading How not to Die, which taught me how important berries, legumes, seeds, nuts and fruit are for you in detail. I tried many combinations before coming up with this beauty it's packed full of everything you need to boost your immune system, Reduce inflammation all the while remaining a wholesome slow release energy snack. Have for breakfast or when ever you fancy it!

Serves 2,Ready in just 5-10 minutes
- 1 large banana.
- 1 Apple (pink lady is best).
- 300g light and free oat based vanilla yogurt (or to your taste i found oat worked best although coconut is a great option too)
- 4-6 Dates (pitted organic wholefood option).
- Handful of mixed nuts (walnut, brazil,almond, cashew, preference..unsalted)
- 100g Organic Oats.
- 100g unsweetened (I use Alpen).
- 30g Goji Berries (by bulk powders).
- Foodspring Banana or vanilla Vegan protein (not essential but adds that extra protein punch).
- A Sprinkle of Organic Chia Seeds 5-20g.
- 50g linwoods organic Flaxseed mix.
- 3-5 Fresh Basil leaves.
1.Get all your ingredients out on the counter make sure all is accounted for. This is the most important step for me always misplacing things in the kitchen.
2.Before chopping pour in the yogurt along with the oats, Alpen and the foodspring protein (I used 1 scoop of vanilla) to the bottom of a large dish. Add a splash of vegan milk of your choice. Give it a stir with a spoon and allow the oats to soften while you move on to the next step.
3.Cut banana and apple in small slices set aside.
4.Chop/Crush nuts to your preference.
5.Slice Dates into small pieces.
6.Add most of your banana and apple to the mix and stir in. save a few pieces for the top.
7.Add organic flaxseed and stir again.
8.Add 1 spoon more yogurt then place the remaining banana and apple on top.
Sprinkle over the nuts, goji berries, dates and basil in that order.
9.finally dust with a showering of organic chia seeds.
